i can't wait to eat tomorrow...

and my choice is, drum roll....my favorite tuna salad
since it doesn't have any mayo and only has 153 calories per serving.
it's a good choice.



my favorite tuna salad
ingredients:

    2 6 oz. cans tuna, packed in water (drained)
    1 tablespoon extra-virgin olive oil
    ¼ teaspoon ground black pepper
    ½ cup fresh flat-leaf parsley, roughly chopped
    1 tablespoon capers, roughly chopped
    1 teaspoon lemon zest
    2 teaspoons lemon juice
    ½ teaspoon dijon mustard, smooth
    ¼ cup celery, finely minced
    2 cloves garlic, smashed with salt
    ¼ cup red onion, finely minced
Directions:
In a medium bowl, combine the tuna, pepper, olive oil, parsley, capers (make sure they are rinse if brined in salt), lemon zest, and lemon juice. Spread the mixture on a piece of lettuce or your favorite bread or roll. (Serves 4)
