okay if you ever want to taste what mushrooms really taste like roast them in the oven. their flavor doesn't seep out like when you fry them in a pan, but it becomes even more pronounced by oven roasting.
i added these roasted mushrooms to my salad today.
Insalata Grande
1 large box of mixed greens, costco size
1 pound button mushrooms, sliced and roasted
1 bag pine nuts, toasted
1 14 oz. can artichoke hearts, quartered, not marinated
6 medium tomatoes, cut in half, sliced in half-moons
olives, whatever type you like
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
½ teaspoon freshly ground black pepper
½ teaspoon kosher salt
parmesan-reggiano, shaved curls
Roast mushrooms. Mix extra-virgin olive oil, balsamic vinegar, salt and pepper together. Dress the mixed greens with some of the dressing. Should be lightly coated. Use some of the dressing to coat the tomatoes once cut, also use some on the artichokes. Then combine the mushrooms, pine nuts, tomatoes, and artichokes in the salad and toss. Using a vegetable shave parmesan onto the top of the salad.
i did really bad on my eating today, to the point i felt sick.
Small Cheddar-Jack Mac & Cheese with Chicken slices of seasoned, grilled chicken breast served over tender penne pasta mixed with a creamy cheese sauce. Topped with a buttery crumb topping. i'm sure this was only about 2000 calories

Spinach & Artichoke Dip half of one appetizer while i was waiting for my food, because i was so hungry!
chips & fresh salsa with avocados and corn and bean dip 1/4 cup
roll, bacon & ranch
3 ritz crackers with crab dip
1 stuffed shell with ricotta & mozzarella
1/8 cup broccoli salad
1 chicken kabob with mushrooms
big insalata grande, plateful
1 bite of brownie
1 bite of peanut butter cookie
120 ounces of water
i need to come up with a better food plan. i think that is my problem!
